This is concentrated, structured and long, with jasmine tea, saffron, lemon pith, aniseed, fennel flower, green apple skins and white pepper - all of which colour in the background for the lime flesh and Clare volume of flavour. Brilliant. Drink it now or cellar it as you normally would - it is sensational."
